Country Apple Fritter Bread
This wonderful, sweet, crunchy, delicious Country Apple Fritter Bread is out of this world!!! Thanks to Kim at The Baking Chocolatetess for sharing her recipe. You can click on her photo above for the full recipe and to get inspired to be in the kitchen.
Whenever I cook or bake, I try to be as efficient as possible. The first thing I do is read the recipe through to familiarize myself with the process as well as make sure I have all the ingredients on hand. I know this is a no-brainer to most of you, but I've found myself on more than one occasion excited to try a new recipe only to get started and realize I didn't have everything I needed.
After reading through the recipe, I pull all the ingredients and begin to measure and mix what I need. This way, when I'm ready to move on to the next step, I don't have to scramble to get what I need, it's all right there at my fingertips.
Below are the steps I've taken to create Kim's wonderful bread.
All ingredients are measured, mixed and/or sorted and separated as needed.
Butter and sugar creamed together. Eggs added one at a time and then in goes the vanilla.
Once that is all mixed together, add flour mixture. Then in goes the milk to make a nice, thick batter.
Repeat wth remaining apples and cinnamon/sugar, pressing lightly into the batter.
Bake in a preheated, 350 degree oven for approximately 50-60 minutes or until done. Allow to cool, remove from pan. Drizzle with icing glaze if desired.
We couldn't wait for the bread to cool completely. We enjoyed a piece warm. This bread is really quite delicious. It is sweet, cinnamony and has a nice crunchy top.

Apple Turnovers
What do I do on a cold, snowy day? Make Apple Turnovers of course! This recipe makes a fantastic flaky crust and served warm...no words!!!
Apple Turnovers
Ingredients:
Crust:
1 cup all-purpose flour
1/2 tsp salt
1/2 cup cold butter, divided
1/4 cup ice water
Filling:
I used my own canned Apple pie filling or you can use the following ingredients:
1/3 cup sugar
2 tsp cornstarch
1/8 tsp ground cinnamon
2 medium tart apples. Peeled and thinly sliced
1 tsp lemon juice
2 TBS beaten egg
1 1/2 tsp water
Glaze:
1/4 cup confectioners' sugar
1 tsp water
Directions:
If you have never made crust from scratch, don't be intimated. It's really not as difficult as it seems. This post is a little picture heavy to try to give you a better idea of what the process entails to make these turnovers.
In a small bowl, combine flour and salt, cut in 1/4 cup butter until crumbly. (To cut in the butter, you can use a pastry blender or two butter knives.)
Gradually add water, tossing with a fork until a ball forms.
On a lightly floured surface, roll dough into a 12 x 6 inch rectangle. (I like to roll the dough between two pieces of waxed paper. I use less flour that way and it's less of a mess.)
Cut remaining 1/4 cup butter into thin slices. Starting at a short side of dough, arrange half of the butter slices over two-thirds of rectangle to within 1/2 inch of edges. Fold unbuttered third of dough over middle third. Fold remaining third over the middle, forming a 6 x 4 inch rectangle. Roll dough into a 12 x 6 inch rectangle.
Repeat steps of butter layering and dough folding, ending with a 6 x 4 inch rectangle. Wrap in plastic wrap and refrigerate for 15 minutes. Remove from refrigerator and roll into a 12 x 6 inch rectangle. Fold in half lengthwise and then widthwise. Wrap in plastic wrap and refrigerate for 1 hour.
While the dough is chilling you can make your pie filling. (I don't have pictures of the process because I had already had it canned in my pantry.) Follow the directions below:
In a small saucepan, combine the sugar, cornstarch and cinnamon. Add apples and lemon juice; toss to coat. Bring to a boil over medium heat, stirring constantly. Reduce heat, simmer, uncovered, for 5-10 minutes or until apples are tender, stirring often. Remove from heat.
Now to create your turnovers!!!
In a small bowl, combine egg and water. Remove dough from the refrigerator and roll into a 12 inch square. Cut into four squares. Brush each square with 1/2 of the egg mixture. Spoon about 1/4 cup filling on half of each square.
Fold dough over filling. Press edges with a fork to seal. Place on parchment lined baking sheet. Brush with remaining egg mixture. With a sharp knife, cut three small slits in the top of each turnover.
Place in a preheated 450 degree oven for 17-22 minutes or until golden brown. Remove to a wire rack.
Combine glaze ingredients and drizzle over turnovers. Serve warm.

Apple Crisp
If I am given a choice of desserts and apples are one of the choices, I will choose apples every time. This has to be one of the best Apple Crisp recipes I have ever made and I've made it quite a few times. Tastes wonderful either cold with whipped cream or warm with Vanilla Ice Cream.
Ingredients:
4 large apples
2 tsp fresh lemon juice
3/4 cup packed brown sugar, divided
2 TBS Minute Tapioca
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup all-purpose flour
4 TBS butter, melted
Instructions:
Preheat oven to 400 degrees.
Peel, core and cut apples into 1/8" slices.
In a large bowl, toss apples with lemon juice, 1/4 cup brown sugar, tapioca, cinnamon and nutmeg. Let stand at room temperature for 30 minutes to let juices begin to flow.
Spoon apple mixture into an ungreased 9" square baking dish, cover loosely with foil and bake for 30 minutes.
While apples are baking, in a small bowl, combine flour with remaining 1/2 cup brown sugar. Mix completely. Add melted butter, work in thoroughly with fingers.
After pie has baked for 30 minutes, remove from oven. Sprinkle topping over apples and bake uncovered for 35-45 minutes or until apples bubble and topping turns golden.
