Grilled Chicken Florentine Pasta

My preference is boneless breast of chicken instead of bone-in. I sliced the breast horizontally into thinner pieces, salted and peppered both sides and cooked in the grill pan for a few minutes on each side until cooked through. Tender, moist and full of flavor. I also didn't add the chicken to the sauce but served it on the side. Either way, it is definitely worth the try.
Serve with a side salad. The best part - only 404 calories!

Recipe Review - Bacon, Pepper Jack and Jalapeno Scones
Our garden this year has yielded a wonderful crop of Jalapeno peppers so I've been on a hunt for recipes to use these spicy little gems.
I've tried scone recipes in the past and have never had the best of luck with them. I'm sure I'm the problem and not the one who created the recipe. These scones look so lovely that I knew I had to try my hands at scones at least one more time. Well, let me tell you . . . they are AMAZING!!!
Mine did not rise as much as is shown in the picture but I have a feeling that my baking powder might be a little on the older side and that is the reason. Because we like a little more spice and heat in our food, I did add an extra jalapeno to the recipe.
I surprised my husband with these for breakfast Wednesday morning with eggs, bacon on the side and hot coffee. He loved these scones almost as much as I did :-) They are flaky and full of flavor. I had to hold myself back because I could have eaten a whole lot more than the one I had. I made sure that as soon as they were cooled, I placed them in a freezer bag and are now in the freezer waiting for another day. I'm not sure how well they will freeze and reheat but I'm willing to try them very soon!!!

Chicken with Brussels Sprouts and Mustard Sauce
Chicken with Brussels Sprouts and Mustard Sauce
Ingredients:
- 2 tablespoons olive oil, divided
- 4 (6-ounce) skinless, boneless chicken breast halves
- 3/8 teaspoon salt, divided
- 1/4 teaspoon freshly ground black pepper
- 3/4 cup fat-free, lower-sodium chicken broth, divided
- 1/4 cup unfiltered apple cider
- 2 tablespoons whole-grain Dijon mustard
- 2 tablespoons butter, divided
- 1 tablespoon chopped fresh flat-leaf parsley
- 12 ounces Brussels sprouts, trimmed and halved
Directions:
Preheat oven to 450°. Heat a large ovenproof skillet
over high heat.
Add 1 tablespoon oil. Sprinkle chicken with 1/4
teaspoon salt and pepper; add to pan. Cook 3
minutes or until browned. Turn chicken; place pan in oven.
Bake at 450° for 9 minutes or until done. Remove
chicken from pan; keep warm.
Heat pan over medium-high heat. Add 1/2 cup broth
and cider; bring to a boil, scraping pan to loosen
browned bits. Reduce heat to medium-low; simmer 4 minutes or until thickened. Whisk in mustard,
1 tablespoon butter, and parsley.
Heat remaining 1 tablespoon oil and 1 tablespoon
butter in a large nonstick skillet over medium-high
heat. Add Brussels sprouts; sauté 2 minutes or until
lightly browned. Add remaining 1/8 teaspoon
salt and 1/4 cup broth to pan; cover and cook 4
minutes or until crisp-tender. Serve sprouts with
chicken and sauce.

Summer Layered Chicken Salad
Ingredients:
Salad:
7 cups torn romaine lettuce (approx. 1 head)
4 cups rotisserie chicken, cut up
1 cup crumbled gorgonzola or feta cheese
1 cup pecan halves
1 qt fresh strawberries, quartered
Dressing:
1/3 cup olive or vegetable oil
2 TBS sugar or Truvia (equivalent)
1/2 tsp salt
3 TBS red wine vinegar
1 tsp Dijon mustard
1 clove finely chopped garlic
Directions:
In a deep 3-quart salad bowl, place half of the lettuce. Layer with chicken, cheese, pecan halves, remaining lettuce and strawberries.
In a small bowl, mix dressing ingredients with wire whisk until well blended. Just before serving, pour dressing over salad.
Serves 6.

Classic Maryland Crab Cakes
Ingredients:
18 oz. jumbo lump or backfin lump crab meat, fresh or pasteurized
1 large egg
1/4 mayonnaise
1 1/2 tsp Dijon mustard
1 1/2 tsp Old Bay seasoning
1 tsp fresh lemon juice
Sea Salt
1 1/4 cups breadcrumbs
1 TBS chopped fresh flat-leaf parsley
3 TBS olive oil
Lemon wedges for serving
Directions:
Drain the crab meat, if necessary, and pick through it for shells (jumbo lump will not have shells). Put the crab in a medium mixing bowl and set aside.
In a small bowl, whisk the egg, mayonnaise, mustard, Old Bay seasoning, lemon juice and 1/4 tsp salt. Scrape the mixture over the crab and mix gently until well combined. Gently break up the lumps with your fingers but do not over mix.
Sprinkle the breadcrumbs and the parsley over the mixture, and mix them in thoroughly but gently; try not to turn the mixture into a mash - it should be somewhat loose. Cover with plastic wrap and refrigerate for 1 to 3 hours.
Shape the crab mixture into 8 cakes about 1 inch thick. In a 12-inch nonstick skillet, heat the olive oil over medium heat. Add the cakes to the pan (do not crowd). Cook until dark golden brown on the underside, about 4 minutes. Flip the cakes, reduce the heat to medium low and continue cooking until the other side is well browned, 4 to 5 minutes.
Serve with lemon wedges on the side for squeezing over the cakes.

Slow-Cooker Meatloaf with Bacon
Ingredients:
1 1/2 lbs lean ground beef
3 egg whites
1 1/2 cups finely chopped white button mushrooms
3/4 cup finely minced onion
2 cloves garlic, minced
2 tsp tamari
2 tsp fresh thyme leaves
3/4 tsp dried oregano
3/4 tsp black pepper
1/4 tsp sea salt
1/4 tsp crushed red pepper flakes
4 slices turkey bacon
Cracked black pepper
Directions:
Mix the first 11 ingredients (everything but the bacon and cracked black pepper) in a large bowl. Shape the mixture into a flattened ball, and place it in the slow cooker. Top with the turkey bacon, and sprinkle generously with cracked black pepper. Cook on low for 4 hours, or until a thermometer
inserted into the center of the meatloaf reads 160 degrees.
Serves 8

Ingredients:
Dressing:
1 tablespoon sugar
2 tablespoons red wine vinegar
1 tablespoon water
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 tablespoons extra-virgin olive oil
Salad:
4 cups torn romaine lettuce
4 cups arugula
2 cups quartered strawberries
1/3 cup vertically sliced red onion
12 ounces skinless, boneless rotisserie chicken breast,
sliced
2 tablespoons unsalted cashews, halved
1/2 cup (2 ounces) crumbled blue cheese
Preparation:
1. To prepare dressing, combine first 5 ingredients in a
small bowl. Gradually drizzle in oil, stirring constantly with a whisk.
2. To prepare salad, combine romaine and next 4 ingredients
(through chicken) in a bowl; toss gently. Place about 2 cups chicken mixture on
each of 4 plates. Top each serving with 1 1/2 teaspoons cashews and 2
tablespoons cheese. Drizzle about 4 teaspoons dressing over each serving.
