Rosemary Chicken Salad Wrap
This makes a great lunch. For my post on how I prepare my chicken breast, click here. To make this even easier, you can use rotisserie chicken from your favorite grocery store!
Combine 1/2 cup chopped cooked skinless chicken breast with 1 TBS canola mayonnaise, 1 TBS nonfat plain Greek yogurt, 2 tsp chopped fresh rosemary and a dash each of salt, garlic powder and pepper.
Place 2 lettuce leaves and 1/4 cup roasted red peppers down center of whole wheat wrap (such as Flatout); top with chicken mixture and wrap tightly.
Makes 1 serving.
